Vody a vybran\u00e9ho druhu mouky. D\u00edky p\u0159irozen\u00e9 mikrofl\u00f3\u0159e, kter\u00e1 se nach\u00e1z\u00ed ve vod\u011b, mouce a ve vzduchu se v\u00a0t\u00e9to sm\u011bsi probud\u00ed \u017eivot, kter\u00fd se n\u00e1m jev\u00ed v podob\u011b drobn\u00fdch bublinek na povrchu a ve struktu\u0159e kv\u00e1sku.<\/p>\n<h2>Bezlepkov\u00fd kv\u00e1sek<\/h2>\n<p>Dokud nem\u00e1 kv\u00e1sek dostate\u010dnou s\u00edlu, pot\u0159ebuje n\u011bkolik dn\u00ed na vyzr\u00e1n\u00ed, b\u011bhem kter\u00fdch kv\u00e1\u0161ek p\u0159ikrmujeme moukou, ze kter\u00e9 jsme ho vyrobili a\u00a0p\u0159id\u00e1v\u00e1me vodu na doc\u00edlen\u00ed po\u017eadovan\u00e9 konzistence. Kdy\u017e kv\u00e1sek \u0159\u00e1dn\u011b dozraje, je p\u0159ipraven\u00fd na pln\u011bn\u00ed sv\u00e9ho posl\u00e1n\u00ed- d\u00edky kv\u00e1sku bude budouc\u00ed chleb\u00edk kynout nejp\u0159irozen\u011bj\u0161\u00edm zp\u016fsobem bez p\u0159id\u00e1n\u00ed pr\u016fmyslov\u011b vyroben\u00fdch kvasnic- dro\u017ed\u00ed nebo kyp\u0159idel.<\/p>\n<p><!--more--><\/p>\n<p>J\u00e1 si u\u017e del\u0161\u00ed dobu doma pe\u010du kv\u00e1skov\u00fd chleb\u00edk, jeliko\u017e mi lepek ne\u0161kod\u00ed, m\u016fj nejobl\u00edben\u011bj\u0161\u00ed je km\u00ednov\u00fd. Pou\u017e\u00edv\u00e1m \u010dist\u00fd km\u00ednov\u00fd kv\u00e1sek, kter\u00fd jsem si sama vyp\u011bstovala a\u00a0do chleb\u00edku m\u00edch\u00e1m hladkou a\u00a0celozrnnou km\u00ednovou mouku. Do tohto chleb\u00edku jsme se cel\u00e1 rodina zamilovali a\u00a0v\u017edy, kdy\u017e m\u00e1m \u010das, up\u0159ednostn\u00edm pe\u010den\u00ed dom\u00e1c\u00edho chleb\u00edku p\u0159ed kupovan\u00fdm.<\/p>\n<p>V\u00a0posledn\u00edch roc\u00edch se ale zaj\u00edm\u00e1m o\u00a0bezlepkov\u00e9 trendy a\u00a0ned\u00e1vno m\u011b zaujal \u010dl\u00e1nek o\u00a0bezlepkov\u00e9m kv\u00e1skov\u00e1n\u00ed. Nemohla jsem si to p\u0159edstavit, tak jsem hledala v\u00edce informac\u00ed a\u017e jsem se dostala k\u00a0velmi \u0161ikovn\u00e9 d\u00e1m\u011b, kter\u00e9 se kv\u00e1sek a\u00a0pe\u010den\u00ed z\u00a0n\u011bj stalo doslova povol\u00e1n\u00edm. Lenka pe\u010de kv\u00e1skov\u00e9 chleby, pe\u010diva a\u00a0kol\u00e1\u010de a\u00a0toto know how si nenech\u00e1v\u00e1 jen pro sebe. U\u017e n\u011bjakou dobu organizuje \u00fasp\u011b\u0161n\u00e9 a\u00a0v\u017edy rychle vyprodan\u00e9 kurzy pe\u010den\u00ed kv\u00e1skov\u00e9ho chleba nebo pe\u010diva.<\/p>\n<p>Tak jsem se p\u0159ihl\u00e1sila i\u00a0j\u00e1. Na kurz pe\u010den\u00ed bezlepkov\u00e9ho kv\u00e1skov\u00e9ho chleba. V\u00a0p\u0159\u00edjemn\u00e9m prost\u0159ed\u00ed se n\u00e1s setkalo p\u00e1r zv\u011bdav\u00fdch, u\u010den\u00ed- chtiv\u00fdch \u017een a\u00a0ka\u017ed\u00e1 jsme se cht\u011bla nau\u010dit p\u00e9ct bezchybn\u00fd kv\u00e1skov\u00fd chl\u00e9b. Na bezlepkov\u00fd chl\u00e9b jsme pou\u017eili jako z\u00e1klad r\u00fd\u017eov\u00fd kv\u00e1sek, ze kter\u00e9ho jsme si vyrobili rozkvas a\u00a0ten jsme d\u00e1le m\u00edchali s\u00a0p\u0159irozen\u011b bezlepkov\u00fdmi moukami. Pom\u011br a\u00a0slo\u017een\u00ed mouk je v\u00edce m\u00e9n\u011b libovoln\u00fd s\u00a0t\u00edm, \u017ee v\u00fdsledn\u00e1 konzistence t\u011bsta mus\u00ed b\u00fdt pru\u017en\u00e1, nerozt\u011bkav\u00e1 ale z\u00e1rove\u0148 ne p\u0159\u00edli\u0161 tvrd\u00e1.<\/p>\n<p>J\u00e1 jsem si m\u016fj bezlepkov\u00fd kv\u00e1skov\u00fd chl\u00e9b nam\u00edchala z\u00a0cirokov\u00e9 a\u00a0pohankov\u00e9 mouky. Na kurzu jsem si p\u0159ipravila t\u011bsto, ulo\u017eila ho do o\u0161atky (se srd\u00ed\u010dkem) a\u00a0nechala ho doma v\u00a0lednici do r\u00e1na nakynout. R\u00e1no jsem si rozeh\u0159\u00e1la troubu, chl\u00e9b jsem vyklopila z\u00a0o\u0161atky a\u00a0upekla.<\/p>\n<p>Celou kuchyn\u00ed se nesla n\u00e1dhern\u00e1 v\u016fn\u011b \u010derstv\u011b upe\u010den\u00e9ho chleba a\u00a0nikdo by ne\u0159ekl, \u017ee je chl\u00e9b bezlepkov\u00fd. Nechala jsem ho \u0159\u00e1dn\u011b vychladnout (co\u017e je z\u00e1kladn\u00ed pravidlo p\u0159i pe\u010den\u00ed chleba, nikdy nena\u0159e\u017ete chl\u00e9b, dokud nen\u00ed \u00fapln\u011b vychladnut\u00fd, proto\u017ee st\u0159ed se dop\u00e9k\u00e1 je\u0161t\u011b i\u00a0po vyt\u00e1hnut\u00ed chleba z\u00a0trouby) a\u00a0nemohla jsem se do\u010dkat, a\u017e ho ochutn\u00e1m. Resp. kdy ho v\u011bdecky posoud\u00edm, proto\u017ee jsem byla velmi zv\u011bdav\u00e1 nejen na jeho chu\u0165, ale i\u00a0na strukturu, m\u011bkkost, k\u0159upavost k\u016frky, jeho trvanlivost atd.<\/p>\n<p>V\u00fdsledek m\u011b nep\u0159ekvapil, proto\u017ee u\u017e na kurzu n\u00e1m Lenka upekla uk\u00e1zkov\u00fd chl\u00e9b a\u00a0r\u016fzn\u00e9 druhy bezlepkov\u00e9ho kv\u00e1skov\u00e9ho chleba jsme mohli i\u00a0ochutnat. Chl\u00e9b byl vynikaj\u00edc\u00ed, m\u011bkk\u00fd, nerozpadav\u00fd, s\u00a0typickou chut\u00ed kv\u00e1skov\u00e9ho chleba. A\u00a0co je nejlep\u0161\u00ed (bezlepk\u00e1\u010di, p\u0159esn\u011b v\u00edte, o\u00a0\u010dem mluv\u00edm)- chl\u00e9b z\u016fstal m\u011bkk\u00fd a\u00a0nerozpadav\u00fd i\u00a0na druh\u00fd den.<\/p>\n<p>Tak\u017ee jsem se rozhodla. Jdu do toho naplno. Jdu testovat r\u016fzn\u00e9 kombinace bezlepkov\u00fdch mouk a\u00a0p\u0159iprav\u00edm pro v\u00e1s recept, jak si z\u00a0Novalim p\u0159irozen\u011b bezlepkov\u00fdch mouk m\u016f\u017eete i\u00a0vy doma up\u00e9ct bezlepkov\u00fd kv\u00e1skov\u00fd chl\u00e9b. Za\u010dneme p\u0159\u00edpravou z\u00e1kladu a\u00a0t\u00edm je bezlepkov\u00fd kv\u00e1sek z\u00a0r\u00fd\u017eov\u00e9 mouky.<\/p>\n<p>Pokud chcete experimentovat i\u00a0bez kurzu, za\u010dn\u011bte p\u011bstov\u00e1n\u00edm kv\u00e1sku nap\u0159\u00edklad z\u00a0r\u00fd\u017eov\u00e9 mouky. Na \u00favod sm\u00edch\u00e1me 100 g r\u00fd\u017eov\u00e9 mouky 100 g vody do ka\u0161ovita, tuto sm\u011bs nech\u00e1me ve v\u011bt\u0161\u00edm zava\u0159eninov\u00e9m poh\u00e1ru s\u00a0p\u0159ilo\u017een\u00fdm v\u00ed\u010dkem na tepl\u00e9m m\u00edst\u011b zr\u00e1t. T\u0159\u00edkr\u00e1t denn\u011b kv\u00e1sek p\u0159ikrmuje 2 PL mouky a\u00a02 PL vl\u00e1\u017en\u00e9 vody a\u00a0v\u017edy prom\u00edch\u00e1me. Ide\u00e1ln\u011b p\u0159ikrmuje ve stejn\u00e9m \u010dase a\u00a0po dobu 7 dn\u016f. Kv\u00e1sek za\u010dne postupn\u011b bublinkovat a\u00a0kysele zap\u00e1chat. Tento z\u00e1pach je v\u00a0po\u0159\u00e1dku, pokud se v\u00e1m zd\u00e1 sm\u011bs b\u00fdt p\u0159\u00edli\u0161 kysel\u00e1, m\u016f\u017ee to znament, \u017ee kv\u00e1sek je ,,hladov\u00fd,, tak jen prost\u011b p\u0159id\u00e1me mouku a\u00a0vodu a\u00a0prom\u00edch\u00e1me. Hotov\u00fd kv\u00e1sek udr\u017euje v\u00a0uzav\u0159et\u00e9 sklen\u011bn\u00e9 n\u00e1dob\u011b v\u00a0lednici a\u00a0sta\u010d\u00ed ho p\u0159ikrmit jednou za t\u00fdden l\u017e\u00edc\u00ed mouky a\u00a0l\u017e\u00edc\u00ed vody. Pokud si zvol\u00edme, \u017ee si p\u0159iprav\u00edme r\u00fd\u017eov\u00fd kv\u00e1sek, v\u017edy pou\u017e\u00edv\u00e1me na p\u0159ikrmov\u00e1n\u00ed jen r\u00fd\u017eovou mouku, aby z\u016fstal kv\u00e1sek \u010dist\u00fd.
