J\u00e1 osobn\u011b si dom\u00e1c\u00ed chl\u00e9b pe\u010du t\u00e9m\u011b\u0159 pravideln\u011b. Kdy\u017e jsem zjistila, \u017ee to je velmi jednoduch\u00e9, tak jsem ud\u011blala prvn\u00ed pokus a kdy\u017e se v\u00fdborn\u011b vyda\u0159il, recept jsem si zalo\u017eila do se\u0161itu s recepty a od t\u00e9 doby ho pe\u010du. Nen\u00ed toti\u017e nic lep\u0161\u00edho, ne\u017e kdy\u017e v\u00e1m kuchy\u0148 von\u00ed po \u010derstv\u011b upe\u010den\u00e9m chlebu. A dal\u0161\u00edm bonusem je, \u017ee kdy\u017e si chleb\u00ed\u010dek pe\u010dete sami, v\u00edte p\u0159esn\u011b, co jste do n\u011bj dali.<\/p>\n<p>Kdy\u017e u\u017e jsem se c\u00edtila b\u00fdt dost zku\u0161en\u00e1 v pe\u010den\u00ed chleba, posunula jsem to na dal\u0161\u00ed \u00farove\u0148 a za\u010dala jsem se zab\u00fdvat my\u0161lenkou p\u00e9ct kv\u00e1skov\u00fd chl\u00e9b.<\/p>\n<p>Kv\u00e1sek je p\u0159\u00edrodn\u00ed fermentovan\u00fd v\u00fdrobek. P\u0159i jeho mno\u017een\u00ed vyu\u017e\u00edv\u00e1me fl\u00f3ru, kter\u00e1 se p\u0159irozen\u011b nach\u00e1z\u00ed v mouce ale i ve vzduchu na\u0161\u00ed kuchyn\u011b. I va\u0161\u00ed. Kv\u00e1sek je 100% hydratovan\u00fd, to znamen\u00e1, \u017ee ho p\u0159ipravujeme sm\u00edch\u00e1n\u00edm stejn\u00e9ho mno\u017estv\u00ed mouky a vody. \u0158id\u0161\u00ed kv\u00e1sek poskytuje lep\u0161\u00ed podm\u00ednky na r\u016fst bakteri\u00ed ml\u00e9\u010dn\u00e9ho kva\u0161en\u00ed a v\u00fdsledkem je m\u00e9n\u011b kysel\u00e1 chu\u0165. \u010cili \u010d\u00edm hutn\u011bj\u0161\u00ed kv\u00e1sek si vyrob\u00edme, t\u00edm kyselej\u0161\u00ed chu\u0165 chleba doc\u00edl\u00edme.<\/p>\n<p><a href=\"http:\/\/novalimglutenfree.com\/wp-content\/uploads\/2016\/10\/kvasok1.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-7538\" src=\"http:\/\/novalimglutenfree.com\/wp-content\/uploads\/2016\/10\/kvasok1.jpg\" alt=\"\" width=\"276\" height=\"183\" \/><\/a><\/p>\n<p>Kv\u00e1sek nejl\u00e9pe roste p\u0159i teplot\u011b kolem 25 stup\u0148\u016f. Od teploty v m\u00edstnosti pak z\u00e1vis\u00ed i mno\u017estv\u00ed \u010dasu, kter\u00fd je pot\u0159ebn\u00fd na dozr\u00e1n\u00ed a dal\u0161\u00ed p\u0159ikrmen\u00ed. Pokud je v m\u00edstnosti p\u0159\u00edli\u0161 teplo, kvasinky se mno\u017e\u00ed rychleji a pokud t\u011bsto v\u010das nep\u0159ikrm\u00edte mohou se kvasinky p\u0159emno\u017eit a v\u00fdsledkem je p\u0159ekyselen\u00e9 t\u011bsto.<br \/>\nD\u00edky obsahu bakteri\u00ed ml\u00e9\u010dn\u00e9ho kva\u0161en\u00ed je kv\u00e1skov\u00fd chl\u00e9b zdrav\u011bj\u0161\u00ed a l\u00e9pe straviteln\u00fd. I samotn\u00e9 pe\u010den\u00ed kv\u00e1skov\u00e9ho chleba, kter\u00fd je sice pracn\u00fd, vy\u017eaduje hodn\u011b p\u00e9\u010de o samotn\u00fd kv\u00e1sek, ale v\u00fdsledek je \u00fa\u017easn\u00fd a chu\u0165 kv\u00e1skov\u00e9ho chleba jedine\u010dn\u00e1.<\/p>\n<p>Ale p\u0159izn\u00e1m se, st\u00e1le jsem nov\u00e1\u010dkem v pe\u010den\u00ed bezlepkov\u00fdch chleb\u00ed\u010dk\u016f a rovn\u011b\u017e v p\u0159\u00edprav\u011b bezlepkov\u00e9ho kv\u00e1sku. Od zku\u0161en\u011bj\u0161\u00edch &#8220;hospodyn\u011bk&#8221; jsem sesb\u00edrala tipy na to, jak si p\u0159ipravit vlastn\u00ed kv\u00e1sek z mouk neobsahuj\u00edc\u00edch lepek a n\u00e1sledn\u011b, jak z toho kv\u00e1sku up\u00e9ct bezlepkov\u00fd kv\u00e1skov\u00fd chleb\u00ed\u010dek.<\/p>\n<p>Jedna z na\u0161ich fanynek a \u010dten\u00e1\u0159ek se s n\u00e1mi v minulosti pod\u011blila o recept na bezlepkov\u00fd kv\u00e1sek z kuku\u0159i\u010dn\u00e9 mouky. Nenech\u00e1v\u00e1me si ho pro sebe a sd\u00edl\u00edme ho:<\/p>\n<p>250 g hladk\u00e9 kuku\u0159i\u010dn\u00e9 mouky zalijeme s 250 ml vla\u017en\u00e9 vody a rozm\u00edch\u00e1me na ka\u0161i. Nalijeme do v\u011bt\u0161\u00ed n\u00e1doby (pozor, kv\u00e1sek n\u011bkdy rychle roste a m\u016f\u017ee nastat efekt &#8220;hrne\u010dku va\u0159&#8221;). Nech\u00e1me p\u0159i pokojov\u00e9 teplot\u011b odst\u00e1t v kuchyni (j\u00e1 ho vylo\u017eila na ledni\u010dku) a kdy\u017e si b\u011bhem dne vzpomeneme, tak ho prom\u00edch\u00e1me. Kdy\u017e uplynou dva dny, za\u010dneme p\u0159ikrmovat. P\u0159id\u00e1v\u00e1me podle hesla: kolik mouky tolik vody &#8211; sta\u010d\u00ed za\u010d\u00edt nap\u0159\u00edklad s dv\u011bma l\u017e\u00edcemi kuku\u0159i\u010dn\u00e9 mouky a 2 l\u017e\u00edcemi vody. Prom\u00edch\u00e1me \u0159\u00e1dn\u011b a nech\u00e1me odst\u00e1t do druh\u00e9ho dne, kdy opakujeme krmen\u00ed kv\u00e1sku. Takto kv\u00e1sek p\u0159ikrmujeme asi t\u00fdden. Kdy\u017e se n\u00e1m vytvo\u0159\u00ed bublinkov\u00e1 kvas\u00edc\u00ed sm\u011bs (pozn\u00e1te to i podle v\u016fn\u011b piva :-)), kv\u00e1sek je p\u0159ipraven na dal\u0161\u00ed zpracov\u00e1n\u00ed. Pokud se v\u00e1m ho zrovna nechce zpracov\u00e1vat, nevad\u00ed, pokra\u010dujte v p\u0159ikrmov\u00e1n\u00ed.<\/p>\n<p>Kdy\u017e u\u017e se chyst\u00e1me p\u00e9ct, tak z kv\u00e1sku odebereme pot\u0159ebn\u00e9 mno\u017estv\u00ed a zbytek kv\u00e1sku p\u0159ikrm\u00edme moukou a vodou, prom\u00edch\u00e1me, nech\u00e1me prokvasit. Kv\u00e1sek se dob\u0159e skladuje v chladni\u010dce. J\u00e1 ho p\u0159ed pe\u010den\u00edm vyt\u00e1hnu den dop\u0159edu ven, p\u0159ikrm\u00edm, prom\u00edch\u00e1m a po pou\u017eit\u00ed ho znovu odkl\u00e1d\u00e1m do lednice.<br \/>\nPokud m\u00e1te odzkou\u0161en\u00fd a funguj\u00edc\u00ed recept na kv\u00e1skov\u00fd chleb\u00ed\u010dek bez lepku, napi\u0161te n\u00e1m.
